Apple Fritters

No need for a corner donut shop anymore!



NOTE: It's best to use a kitchen scale whenever possible. If you don't yet own a scale, these recipes are based upon 'lightly packed' measuring cups, so whether you use the 'dip and sweep' method of measuring or the 'spooning into the cup' method, always gently press down on the mix in the measuring cup and add more to fill the cup, as necessary.

1 cup of Bakery Mix equals approx. 125g.


INGREDIENTS


Fritters

4 medium apples, peeled and diced

2 1/4 Cups Multi-Use Bakery Mix (281g)

1/2 Cup S'WEEET! Sweetener Blend (70g)

1 T baking powder (optional)

4 eggs (200g)

3/4 Cup milk (180g)

2 tsp cinnamon


Glaze

1/4 cup S'WEEET! Sweetener

2-3 t milk


TIPS: We prefer to fry with palm shortening or coconut oil. You can find refined (flavorless) coconut oil in many stores if you prefer. These can be reheated and crisped up a bit in an air-fryer or a 400 degree F oven for a few minutes. We highly recommend investing in a candy thermometer that hooks onto the side of your pan to make frying much easier!


DIRECTIONS


1, Add 3" neutral oil to a medium-size sauce pan and bring the temperature to 365 degrees

2. Mix fritter ingredients well and let sit while oil heats.

3. Scoop 1/4 cup size fritters into oil and fry for 2 minutes on each side.

4. Watch oil temperature and lower if they brown too quick. If they are cooked at too high a temperature they will burn before the center is done.

5. Remove to a paper towel lined plate.

6, Glaze while warm and ENJOY!
