IMO (isomalto-oligosaccharide) is classified as a non-digestible carbohydrate derived from tapioca. In moderate amounts, we find very little effect on blood glucose. Also, contrary to some reports, we do not find it causes stomach upset in most people. This is one reason we love it and chose it over some other sweeteners, such as xylitol or erythritol.
